Viticulture | Hands-on techniques in the vineyard, such as hand leaf-plucking and fruit-thinning aim to achieve good ripeness and flavour in this variety. The settled late summer delivered lovely clean aromatic fruit at harvest in March 2019. |
Winemaking | The Woven Stone Pinot Noir is light, aromatic and approachable, reflecting the characteristics of the fruit grown in the vineyard. The ferment is kept quite cool and short to preserve the fruit aromatics. In 2019, we had very clean fruit from the vineyard, showing quite an aromatic ferment through to pressing. The wine was aged for seven months before being prepared for bottling in November. |
