Palate | Splendidly structured by fine-grained tannins, finishing impressively long and delicately drying. Intense pear and ripe red apple, luscious, crunchy nashi pear, fresh ginger, quite rich and spicy. |

Viticulture | Ōhau vineyard is perfect for cool climate wine production. Late, dry autumns provide cool nights ideal for the slow flavour development during the ripening of the fruit. |
Winemaking | Preserving the vibrant flavours from the vineyard is at the core of our winemaking. Skins ferments, especially for pinot gris are on the rise, and winemaker Jane Cooper was keen to experiment with that style on our aromatic, fruity grapes. This skins pinot gris was crushed direct to an open top fermenter, fermented at very cold temps with an aromatic yeast (X16, 7-8C), with a total skins time of approx. 16 days. It was then pressed and stop fermented to retain some natural sweetness. |
