The Not the Norm range is for wines we don't make every year. Winemaker Jane Cooper takes the best grapes from harvest and hand-crafts something special.

Viticulture | Ōhau vineyard is perfect for cool climate wine production. Late, dry autumns provide cool nights ideal for the slow flavour development during the ripening of the fruit. |
Winemaking | Our winemaker said "Great fun making this wine!" It's quite a complex wine in terms of processes: a really cold skin ferment of a white wine, cap management, and the fermentation tension – wanting to keep it on an edge that captures the thiol/flint/struck stone notes but not go over the top. |
