Tasting Notes
Aroma | Intensely aromatic, with flint, struck stone, lime skins and lime oil, and a hint of tomato leaf. |
Palate | The concentrated palate shows limes and citrus, some gooseberry and flint with zesty, taut acidity and structure. Loads of power with a long finish. |
Food Match | Pair with grilled salmon or pan-fried snapper, served with Mediterranean-style vegetables. |
Viticulture | Ōhau vineyard is perfect for cool climate wine production. Our temperatures drop several degrees before harvest, and the slow flavour development produces intensely aromatic, crisp, fruit-driven wines. The grapes were harvested in late March 2020. |
Winemaking | The aim for this wine is a refined, mineral style. We select grapes from blocks with these characters and winemaker Jane Cooper uses slightly more restrained yeasts, and keeps the ferments clean and slow. Prepared for bottling in February 2021. |
