Palate | A succulent palate offering creamy texture backed by bright acidity, with sea shell, lemon rind, summer peach, some toasty oak and a bit of textural grapefruit skin. |
Viticulture | Ōhau vineyard is perfect for cool climate wine production. Late, dry autumns provide cool nights ideal for the slow flavour development during the ripening of the fruit. This is our first harvest from youngish vines planted in 2019. For the first few years, we removed the early signs of fruit to allow the vines to grow and strengthen before the heavy task of fruiting and ripening grapes. |
Winemaking | As this was the first chardonnay, the winemaking was focussed on understanding the characteristics and flavour profile of our fruit and how to highlight the best features of the grapes. The wine was fermented in old oak barrels, which brings a delicate toasty oak to the chardonnay. |
