Superbly vibrant and concentrated - the Not the Norm Sauvignon Blanc is a textured, aromatic blend of three fermentation styles: on-skin, wild in barrels, and tank. It's complex and deeeelicious.
The Not the Norm range is for wines we don't make every year. Winemaker Jane Cooper takes the best grapes from harvest and hand-crafts something special.
Review: “It’s beautifully aromatic on the nose showing grapefruit, Granny Smith apple and sweet basil aromas, leading to a concentrated palate that’s focused and finely textured. Brilliantly structured by racy acidity, finishing persistent and mouth-watering. 5 stars.” Sam Kim, Wine Orbit
|Aroma||Beautifully aromatic on the nose showing grapefruit, Granny Smith apple and sweet basil aromas|
|Palate||Super vibrant, white florals, limes, flint, passion fruit, phenolic texture, delicious.|
|Food Match||Equally well-matched with light summer salads and whatever you've thrown on the bbq.|
|Viticulture||Ōhau vineyard is perfect for cool climate wine production. Late, dry autumns provide cool nights ideal for the slow flavour development during the ripening of the fruit.|
|Winemaking||Our winemaker said "Great fun making this wine!" It's quite a complex wine in terms of processes: a really cold skin ferment of a white wine, cap management, and the fermentation tension – wanting to keep it on an edge that captures the thiol/flint/struck stone notes but not go over the top.|
