We've intensified our pinot noir through distillation to create Te Tihi (the peak), a delicate, delicious fortified pinot. Offering warm and fruity, spicy, Christmas-cakey flavours.

Tasting Notes

Aroma Delightfully fruity and spicy on the nose, with strawberry, raspberry, aromatic Christmas cake, nutmeg and cinnamon.
Palate Delicate and approachable, showing Christmas cake, cedar, strawberry and spice.
Viticulture While we don't get the very hot weather that many wine regions experience in summer, we have a long growing season and cool nights in Ōhau, which offer ideal conditions for flavour development. Maintaining an open canopy with good fruit exposure ensures full ripeness on the pinot noir fruit. The pinot noir in Te Tihi is from our 2022 vintage - which was a slightly tricky vintage, with cyclonic weather around veraison and unsettled weather through harvest. But the team managed these issues well, and the harvested grapes were varietal and fruity.
Winemaking We fermented the pinot noir and left it on gross lees for two months for malolactic fermentation and another three months on light lees. Distillation then reduced the volume by 30%.
